Blue Cheese and Onion Burgers

Pair with steamed broccoli & garden salad.

Ingredients

1 Tablespoon butter
1 large Vidalia or other sweet onion, cut into 1/8” thick slices
2 Teaspoons brown sugar
Salt/pepper as desired

1 Teaspoon minced fresh sage
Whole wheat hamburger buns
1/4 Cup crumbled blue cheese

Instructions

To prepare caramelized onions, heat butter in large nonstick skillet over medium heat until hot. Add onion and brown sugar. Cook and stir 15 minutes or until onion is caramelized. Season with salt and pepper as desired and set aside.

Prepare Basic Lean Burger recipe adding sage to other ingredients as you mix before making patties.

Grill patties; when done, place burger on bottom of each bun and top with equal amounts of blue cheese crumbles and caramelized onions. Serve immediately and enjoy!

Taco Burgers

No one said burgers have to be boring!  Check out this new twist on the classic burger.

Prep Time: 10 minutes
Cook Time: 11 - 13 minutes

Ingredients

½ cup reduced fat sour cream
½ cup chopped tomato
2 Tablespoons chopped fresh cilantro
2 Teaspoons fresh lime juice
Pepper
1 Packet taco seasoning mix, divided
8 Corn tortillas
2 Cups shredded lettuce
1/4 Cup Mexican cheese blend

Instructions

Prepare sour cream sauce by combining above ingredients using only 1 tablespoon of the taco seasoning mix. Fold thoroughly, refrigerate in small bowl until ready to use.
Prepare patties to include the balance of the taco seasoning mix, fashion into patties.
Grill 11-13 minutes, turning occasionally.
Overlap slightly 2 corn tortillas on each of 4 plates. Layer lettuce, burgers, sour cream sauce and cheese on tortillas. Fold other tortilla over to cover. Serve with lime wedges if desired.

BBQ Beef Sandwiches

Love the great taste of a BBQ beef sandwich but not all the work?  Let the slow cooker do it for you while you spend time on other fun activities.

Makes: 8-10
Prep Time: Minimal
Cook Time: 6 Hours

Ingredients

1 Beef chuck roast (3 to 3.5 lbs)
1 Medium onion cut into quarters
3 Cloves garlic, peeled
3/4 Cup Water
1 Teaspoon salt
1/2 Teaspoon pepper
1 Bottle (18 oz.) hickory flavored BBQ sauce
8 - 10 Onion rolls, split

Instructions

1. Place the onion and the garlic in your slow cookers and place the beef on top. Add water, salt, and pepper. Cover and cook on high for 5 to 5.5 hours, or low 9 to 9.5 hours, until beef is fork tender. (No stirring is necessary during cooking).
2. Remove beef; cool slightly. Strain the cooking liquid, skim fat. Shred the beef with two forks.
3. Place the beef in a microwave safe dish. Stir in BBQ sauce and half cup on cooking liquid. Cover and microwave on high for 6 to 8 minutes or until heated, stirring once. Serve on rolls.

Slow Cooked Beef Risotto

Ingredients

2 pounds beef for stew, cut into 1 to 1-1/2-inch pieces
2 cups water
2 cloves garlic, minced
1 package (5.5 to 8 ounces) mushroom or cheese risotto mix
1 cup frozen peas
1/3 cup shredded Parmesan cheese
Shredded Parmesan cheese (optional)

Instructions

1.Combine beef, water and garlic in stockpot; bring to a boil. Reduce heat; cover tightly and simmer 1-3/4 hours.
2.Stir in contents of risotto mix package omitting butter or oil; continue simmering, covered, 18 to 20 minutes or until rice is tender and beef is fork-tender. Stir in peas; remove from heat. Let stand 5 minutes.
3.Stir in cheese. Serve with additional cheese, if desired.
